Happy Thanksgiving

Happy Thanksgiving everyone. I know the blog has been a little dead lately. I recently started a third shift job. And while I am thankful for the employment, my spare time is next to none. My husband has done one post for me, and may do more in the future. Hopefully I will be able to get back to weekly posts soon. But since my job is in retail, I have been getting a lot of hours this holiday season.

With that being said, I hope everyone has a great Thanksgiving.

Pepperoni Pasta Bake

For dinner tonight, Pepperoni Pasta Bake!!!

Ingredients: 

  • Your choice of Pasta (for this we like shells)
  • Turkey Pepperoni
  • Ricotta Cheese 
  • 1 jar of Mild Salsa (for more kick use your favorite salsa)
  • 1 jar of Queso Salsa
  • Turkey Sausages
  • Shredded Cheese

Now for the steps to this dance.
  • Boil your pasta of choice until it is nice and tender, this should take approximately 10-12 minutes. Don't forget to preheat the oven to 450˚.
  • Cut the sausages into small discs and layer the bottom of your pan with half of the sausages, salsa and queso, then add a few spoonfuls of ricotta cheese. Stir these up and layer with pepperonis.
  • Pour the pasta on top of this and add a few more spoonfuls of the ricotta cheese.
  • On top of the this layer add the other half of the sausages, salsa and queso, then add a few more spoonfuls of ricotta cheese. Stir these up and layer with pepperonis. Lastly add a top layer of shredded cheese (for this we love shredded pepper jack cheese.)
  • Bake for 40 minutes or until the cheese is a nice brown. Let cool, serve and enjoy!!!

Chocolate peanut butter cookies

So it's been a busy week for me.  I'm finally getting back into the work force and I start work tomorrow.  Unfortunately it is third shift, which will take some getting used to.  Oh and yesterday Samara was lost by the school.  She was riding a different bus and did not expect to get to her stop so soon.  Well my little bookworm had her nose in a book and was not paying attention to where she was at.  So she was lost for about 30 minutes.  Can we say stress.

Now on to the recipe.  I posted a teaser pic the other day on Twitter, and now I've actually had a chance to write out the recipe.  Which is simple by the way.  This was the first time I've cooked this particular recipe.  And I do believe it turned out well.  At least they started disappearing really fast.


Chocolate Peanut Butter cookies

Ingredients

1 Box Ritz crackers
1 jar peanut butter
1 bag chocolate of choice
2 Tbsp. shortening
Wax paper


Directions

Put peanut butter on ritz crackers and put one cracker on top to make a sandwich.  I used the whole box for this as I was making white chocolate and dark chocolate.  I had a few crackers left that the children devoured with their lunch the next day.  Once all sandwiches are put together then put the plate in the freezer for about 30 minutes.  This ensures that the peanut butter will not melt when it comes in contact with the very hot chocolate.

Next comes melting the chocolate.  Put one cup chocolate and 1 Tbsp. shortening in a double broiler to melt.  As I was using one full bag of chocolate that equals 2 cups I put 2 tablespoons shortening.  Also I did not have a double broiler so I created one using pots in my cabinet.

Stir the chocolate until it is smooth.  Remove from heat.  I removed the sandwiches from the freezer a few at a time so they would not thaw.  And drop them in the chocolate.  Using tongs flip over the sandwiches until covered completely in chocolate.  And place on a piece of wax paper to dry.  I ended up putting this in the freezer to speed up the process.  Takes about an hour at room temp. but only about 20 minutes in freezer.
With using a full bag of dark chocolate and a full bag of white chocolate I got about 50 cookies.  That number is not exact as the cookies were getting eaten before I could count them.  Most in my family preferred the white chocolate, the dark chocolate was a little too bitter to most.  But Conrad, my little oddball, loved the dark chocolate.  This is definitely something I will make again in the future.  I want to try a raspberry flavored chocolate.  Here is the finished product.

A definite favorite.

Baked Mashed Potatoes

Baked Mashed Potatoes was one of my husband's many creations.  It is simple and great for a large dinner.  I always cook this when I am baking other dishes.  It is a great alternative to both baked potatoes and mashed potatoes.  This is one of the few dishes that the entire family loves.


Baked Mashed Potatoes

Ingredients:

5 lbs. potatoes
1 cup butter
1 cup sour cream
1 cup cheese
1/2 cup bacon bits (optional)
Salt and Pepper to taste

Directions:

Scrub the potatoes. Chop into small pieces. I prefer to leave the skin on but that is optional.  And remember the smaller the piece the quicker they cook.


As I chop them, I put the pieces into water so they don't turn brown and gross.  Bring to a boil and let boil for 15-20 or to the consistency of a baked potato.  Drain.  Put the cooked potatoes into a large mixing bowl and add all other ingredients.


At this point you can either stir with a spoon or use a potato masher to mix it all together.  It is ok if there are lumps.  Then simply put into a greased baking dish and cook at 450ยบ for about 20 minutes or until the top is a nice brown color. Voila, now you can enjoy.


What is so great about this one is the fact that you can change the additional ingredients.  Add whatever you like.  As an example, my brother loves A1 on his potatoes.  So you can always have a little different flavor.  And while potatoes go with almost anything, this is great with chili piled on top.

Our Journey Begins

Cooking for a family can be difficult at times. You have a wide variety of tastes, and no one seems to like the same foods.  Hopefully this blog will help. I will be posting easy step by step recipes.  Some will be family favorites, some will be new for me and my family. Just bear with me while I work out the kinks.

Some of the recipes that I will be including in the upcoming months are:

Fried noodles

I will also add new recipes as I find them.  Some will come from old cookbooks and some from pinterest.  I will always link to original recipes and give credit where it is due. As these will be recipes for the family I will give their ratings on what is cooked.

Our family is very diverse in food tastes.  At the top of the pyramid is my husband, Rob. He will eat almost anything (the spicier the better). Then there is me, Crystal. I am pretty open minded with varied tastes. And now the interesting family members. Next comes Samara. She is my 9 year old who was a vegetarian until the age of 5. She would eat chicken and macaroni and cheese all day long if she could. Her motto is: The blander the better. And then there is my Monkeyman Conrad. He's my 7 year old who is a meat and potatoes kind of boy. He doesn't adjust well to change. And he has a strand dislike of cheese.  And the newest addition to the family is 4 month old Ava, my Bugaboo.  Hopefully her tastes will be varied as she grows older.  And there you have it, those are my loves.

As time goes on I will also include fun little projects that can be done either as a family or for family members.
