Baked Mashed Potatoes

Baked Mashed Potatoes was one of my husband's many creations.  It is simple and great for a large dinner.  I always cook this when I am baking other dishes.  It is a great alternative to both baked potatoes and mashed potatoes.  This is one of the few dishes that the entire family loves.


Baked Mashed Potatoes

Ingredients:

5 lbs. potatoes
1 cup butter
1 cup sour cream
1 cup cheese
1/2 cup bacon bits (optional)
Salt and Pepper to taste

Directions:

Scrub the potatoes. Chop into small pieces. I prefer to leave the skin on but that is optional.  And remember the smaller the piece the quicker they cook.


As I chop them, I put the pieces into water so they don't turn brown and gross.  Bring to a boil and let boil for 15-20 or to the consistency of a baked potato.  Drain.  Put the cooked potatoes into a large mixing bowl and add all other ingredients.


At this point you can either stir with a spoon or use a potato masher to mix it all together.  It is ok if there are lumps.  Then simply put into a greased baking dish and cook at 450º for about 20 minutes or until the top is a nice brown color. Voila, now you can enjoy.


What is so great about this one is the fact that you can change the additional ingredients.  Add whatever you like.  As an example, my brother loves A1 on his potatoes.  So you can always have a little different flavor.  And while potatoes go with almost anything, this is great with chili piled on top.
